These healthy Banana Oat Chocolate Chip Breakfast Bars are one of the simplest recipes ever. They have no flour and no eggs and can be easily made gluten free and vegan as well.
Its’ Monday already! Whew! How was everyone’s weekend. My daughter and I went to her gymnastics meet out of state this weekend. We ended up having to leave on Friday since the fabulous Winter Storm Iola was barreling in on Saturday morning. Luckily, one of her friends was competing on Friday night so we were able to stay in their room with them. It just happened to be her friends birthday too, so it was a lot of fun to have a little celebration too!
This was my daughter’s first meet back since breaking her arm the week before Thanksgiving so there was no stopping her from wanting to go 🙂 Plus we always have such a blast with our gymnastics family laughing, talking, and hanging out while the girls swim in the hotel pool. It has become such a “looked forward to” tradition. The snow storm made it even more fun since more families stayed overnight Saturday night too
After getting home, I found these had been made for us! My son’s fabulous girlfriend did some baking on her snow day and I just HAD to share them with you!
They are the perfect healthy breakfast or snack too!! Eat 2 bars and a piece of fruit and a handful of almonds. Um um good!
You can easily make them gluten free by using gluten free oats and agave nector. Bonus!
How to Make Banana Oat Breakfast Bars
Preheat oven to 350 degrees F. Spray 9×9 inch baking pan with nonstick cooking spray.
To make oat flour – Simply put the oats into a food processor or food processor and blend for 1-2 minutes, stopping to stir a few times. You want it to have the consistency of flour.
Pour the oat flour into a medium bowl and add the baking soda, baking powder, baking soda, cinnamon and salt.
Put the bananas, applesauce, honey and vanilla into the food processor or blender and blend for 1-2 minutes or until blended nice and smooth.
Add this to the oat flour and stir to combine.
Add in the ½ cup of chocolate chips and stir gently to blend in.
Pour batter into greased pan (I just use a little coconut oil) and spread evenly.
Bake for 15 minutes or until toothpick or knife comes out clean
Cool 10-15 minutes on wire rack.
To make the drizzle – put 2 tablespoon of chocolate chips and coconut oil in the microwave. Microwave on high 30 seconds
Stir well to combine
Drizzle over top of the bars.
Cut into 16 squares.
ENJOY!
Store in an air tight container. Freezes well.
