Spinach Mushroom Quinoa

This simple Spinach Mushroom Quinoa is a delicious clean eating side dish or even great as a meal in itself when you add chicken as well!

This is one of those recipes that was just “created” with a few of my favorite ingredients. (Pretty much just like Egg White Scramble) Funny how I do that.   You can never go wrong with onion, mushrooms and spinach in any recipe in my opinion!

What I love about this spinach mushroom quinoa is that it not only makes a fabulous side dish but it also can be a meal in itself.   You can add chicken to this for a wonderful dinner as well. Perfect time to use your frozen crockpot chicken quickly.

I eat it for lunch a lot during the summer just because it is so easy to make and have ready to eat for a few days.  :-)

 INGREDIENTS

1 cup of quinoa, cooked per package

2 TBSP of coconut oil or olive oil

4 cloves of garlic

1 large onion, chopped

12 oz of mushrooms, sliced

16 oz of fresh spinach

1 TBSP of balsamic vinegar

DIRECTIONS

Cook quinoa per package directions

Heat the oil in a large saute pan.

Add garlic an onions and saute for about 5 minutes.

Add the mushrooms and balsamic vinegar. Cook for about 10 minutes or until cooked down substantially.

Then add the spinach and cover. Cook until wilted stirs often.

Add the quinoa and toss to mix thoroughly.

Serve hot.

ENJOY!!

What great timing – we have a giant flat of mushrooms that I’ve been working my way through the past two weeks and I’ve been trying to come up with something new to do with them. I’ll be making this tonight!
