NO BAKE MINTS

Cream Cheese Mints are a easy candy to make for Holiday parties and also in pastel colors for showers and wedding mints.

– cream cheese  –  butter softened – powdered sugar – mint extract – Green and Red Gel Food Coloring

In the large mixing bowl, add softened cream cheese and butter.

beat on medium speed with an electric mixer until fluffy.

Add one cup of powdered sugar and mix on low speed. Then add in the mint extract.

Add in remaining powdered sugar in batches of ½ cup, blending in after each.

Divide the dough mixture into 3 equal sections and place each in a separate bowl.

Add green food coloring to one and red food coloring to another.

Stir each well to blend the food coloring in evenly

Cover the bowls with plastic wrap and place in the refrigerator for 2 hours. Line a baking sheet with parchment paper and sprinkle it with a little powdered sugar.

Scoop out dough in 1 tablespoon size scoops and roll them into a ball

Dip a fork into  powdered sugar and press  into each ball to flatten.

Once all the dough has been rolled and pressed, allow the mints to sit out for at least 4 hours until the outside is hardened.  If  bottoms are still soft, flip mints over and allow them to sit for additional time.
