Celebrate St Pattys Day and every day with lamb stew! This one-pot meal, full of tender lamb, smoky bacon and hearty veggies in a flavorful broth is a tried and true recipe you’ll keep coming back to!

Cook the diced bacon in a large Dutch oven.

Season each piece of lamb then sear the pieces of lamb until brown on both sides.

In the same pot, sauté the onions until soft then add garlic.

Pour in the broth and wine and add in tomato paste and herbs and stir.

Place the bacon and seared lamb back to the pot and bring to a boil.

Cover the pot and reduce the heat to a simmer.

Next, add the potatoes and carrots.

Simmer until the potatoes are fork-tender

Stir in the green peas.

Garnish with fresh parsley prior to serving.
