Greetings from the White mountains of New Hampshire! We are having a wonderful little family camping vacay with my brother and his family who are visiting from North Carolina. They are in heaven with these cool temperatures compared to the beastly hot and humid Summer they have.
People ask me very often how I survive the winters in New England. My answer is always “the Summer and Fall” weather. We truly have the most spectacular weather, in my opinion, from May through October.
Camping requires easy meal choices of course. This week we made this wonderful grilled corn on the cob to go with our turkey burgers, grilled portobello mushrooms and asparagus. Clean eating continues even when we go camping too.
Corn on the cob is such a simple addition to any summer cooking, especially when you have the grill already going.
Just toss them on the grill for about 10-15 minutes, turning often until the kernels are a little nice and brown.
Brush with a little melted butter mixed with minced garlic. Squeeze on a little lime juice and its ready to serve. You can even get extra fancy and sprinkle a little parmesan or feta cheese if you’d like.
Grilled Corn on the Cob Ingredients
Fresh corn on the cob
Butter
Minced garlic
Lime juice, optional
Parmesan or feta cheese, optional
HOW TO MAKE GRILLED CORN ON THE COB
Remove the husks and silk from the corn (don’t worry about getting all the silks off they will burn off on the grill)
Cook for approx 10-15 minutes turning often.
Melt butter and mix in minced garlic.
Remove the corn from the grill and brush with garlic butter.
Optional: Squeeze fresh lime juice over the corn and top with cheese
ENJOY!!
