BEER CHEESE SOUP

QUICK'N EASY SOUP

This Beer Cheese Soup is rich and creamy and sharp cheddar cheesy! Loaded with smoky bacon flavor, jalapeños, and your favorite beer, this 30-minute recipe is as simple as it is delicious!

– Bacon – Diced Onion – Minced Garlic – Jalepeño – Butter – Flour – Chicken Broth – Beer, Pale Ale or Lager – Cheddar Cheese – Cornstarch – Heavy Cream – Green Onion

Cook bacon and set aside. Heat large pot over medium heat and add a Tbsp of bacon grease to pot. Add diced onion and cook for 4-5 minutes until tender.

Add garlic and jalapeños to cook for a minute, continue to stir constantly, add butter and flour to create a roux.

Add broth and beer, bring to a boil. Reduce the heat and simmer for 10 minutes, stirring often.

Combine the cheese and cornstarch and toss to coat. Add cream and ½ cup of cheese at a time, stirring constantly until each batch has melted. Remove from the heat.

Garnish with crispy bacon and sliced green onions. Serve hot with soft pretzels on the side!

VARIATIONS - For vegetarian option, use vegetable broth in place of the chicken broth and leave out bacon. -Substitute a Tbsp of olive oil or vegetable oil instead of using bacon grease to cook the onion and garlic. -Substitute whole milk, low fat milk or favorite non dairy milk for the heavy cream. -Use non alcoholic beer if preferred.
