SHORT RIB RAGU

DELICIOUS DISH

This beef short rib ragu is where Italian comfort food and fine dining meet at the dinner table. Braised short ribs in a red wine sauce served over pappardelle noodles is a meal you’ll be dreaming of!

Brown short rib for 2-3 minutes in a pot then set aside.

Sauté celery, carrots, and onions for 3–4 minutes until softened, then add garlic and cook for another minute until fragrant.

Pour in red wine then mix in beef broth, pasta sauce, tomato sauce, fresh herbs, and bay leaves.

Add short ribs back into  pot and bring mixture to boil then cover and simmer until meat falls off the bone.

Shred short ribs, boil sauce uncovered 15 mins, stirring. Return beef to pot and mix.

Cook pasta separately and set aside.

Remove sauce from heat and stir in shredded Parmesan cheese. Add cooked noodles and toss to coat with sauce.

Serve garnished with extra parmesan and fresh herbs like parsley or basil.
