BROCCOLI CHEESE SOUP

 RICH, CREAMY and CHEESY

This easy Broccoli Cheddar Soup is a one-pot soup made in 30 minutes on the stove top using broccoli and sharp cheddar in a cream-based broth! It’s perfect for busy weeknights or cozy weekends.

– Olive Oil – Onion – Minced Garlic – Butter – Flour – Chicken Broth – Broccoli Florets – Carrots – Heavy Cream – Cheddar Cheese

In a large pot, add olive oil and onions. Cook on medium heat until onions are tender.  Add minced garlic and butter. Once butter melts, sprinkle flour over top and stir until blended.

Slowly pour in the chicken broth and stir while adding.

Add broccoli and carrots and bring to slow boil.  Reduce heat to low, simmer until broccoli is tender.

Finally add heavy cream and shredded cheese. Add salt and pepper to your liking. Stir until cheese is melted.

Garnish with extra cheese and croutons if desired
