BUTTERNUT SQUASH CHILI

IT'S CHILI SEASON!

This savory butternut squash chili is made with ground turkey and veggies in a creamy broth that’s ready and on your table in 30 minutes!

olive oil carrot, celery  onion, garlic  thyme  butternut squash  great northern beans  ground turkey chicken broth  heavy cream  fresh kale or spinach

Add the turkey meat to a saute pan and cook over medium high heat until no longer pink Drain into a colander to drain any excess oil and set aside.

add the olive oil, carrot, onion, and celery to a large pot and saute over medium heat for  3-4 minutes

Add the garlic and thyme and saute 1 minute. Then add the butternut squash, beans, turkey meat, and chicken both.

Bring to a boil and then reduce the heat to medium-low and simmer for 15 minutes.

Stir in the cream and  kale and simmer for 4-5 minutes until the kale has wilted.

Garnish with tortilla chips, avocado, etc. if desired
