COCONUT CURRY SOUP

Coconut curry soup is a Thai-inspired recipe made with carrots, celery, tomatoes, and chickpeas simmering in a creamy curry and coconut milk broth. It’s creamy and savory with a hint of spice!

In a large pot, add olive oil and saute the onions, celery, and carrots until tender.

Add minced garlic and ginger then cook for one minute. Stir in the curry powder, red pepper flakes, turmeric, coriander, salt, pepper, and cumin.

Pour in the tomatoes and chickpeas and stir.

Add in vegetable broth and coconut milk and stir to combine then bring to a boil and simmer for 10-15 minutes.
