LENTIL CHILI

EASY DINNER

A wholesome, hearty, delicious  made with lentils for a meatless version the whole family will devour!

olive oil green or red bell pepper onion diced garlic  tomato paste water  diced tomatoes  red kidney beans great northern beans  dry lentils chili powder ground cumin salt dried oregano  paprika

In a dutch oven or  pot, add  olive oil, bell pepper and onions and cook for 3-4 minutes, stirring continually

Add in the garlic  and cook for an additional 2-3 minutes until fragrant.

Then, add the water and tomato paste and stir to combine well.

Add the diced tomatoes, lentils, chili powder, cumin, salt, paprika, oregano, and red pepper flakes

Bring to a boil and then reduce the heat to low and simmer for 15-20 minutes. If your soup begins to look too dry, feel free to add more water as needed.

Add the red kidney beans and great northern beans.and simmer for 15 minutes, until the lentils are tender.

Serve topped with your favorite toppings!
