SHRIMP CAULIFLOWER FRIED RICE

Shrimp cauliflower fried rice has everything you love in traditional shrimp fried rice, including shrimp, veggies, and a simple sauce but we’re making it low-carb by using cauliflower instead of rice!

Pulse the cauliflower florets in a food processor until it becomes a rice consistency.

Melt butter in a skillet then add shrimp and cook.

In skillet, melt more butter over medium-high heat and add whisked eggs to scramble.

Add the remaining butter and sauté the bell peppers, onions, and carrots.

Then add in the cauliflower rice and sauté until just tender.

Add the soy sauce, oyster sauce, and green onion to sauté for 2 minutes.

Then add the cooked shrimp and eggs back in the skillet.

Stir in the sesame oil and mix everything thoroughly.
