HAM AND BEAN SOUP

EASY COMFORT FOOD

White Bean and Ham Soup is a classic, easy recipe that is ready in 30 minutes using  canned beans, ham and simple veggies. Great for using leftover holiday ham. 

– olive oil – onion  – celery  – carrots  – garlic  – fresh thyme  – chicken stock –  Cannellini white beans – cooked ham

In a large  pot, heat the olive oil over medium-high heat.  Then add the onion, celery, and carrots and cook for 5 minutes stirring occasionally until  tender.

Add the minced garlic and thyme and cook for one minute. Then add the chicken stock, beans, and diced ham,

Bring to a boil and then reduce the heat to medium-low and simmer for 15 minutes until warmed through.

VARIATIONS 1. Add crumbled cooked bacon.   2. Add 1 teaspoon of dried red pepper flakes. 3. Add ½ cup of milk or heavy cream at the end. 4. Use vegetable stock instead of chicken stock. 5. Swap the beans for great northern beans, white kidney beans, or navy beans.
