ITALIAN WEDDING  SOUP

EASY FAVORITE

A classic, easy soup with meatballs, pasta and veggies in a flavorful broth!

MEATBALL INGREDIENTS – Eggs – Milk – Breadcrumbs – Parmesan Cheese – Garlic Powder – Onion Powder – Salt – Italian Seasoning – Red Pepper Flakes – Ground Beef – Ground Pork – Olive Oil

In a large bowl, whisk egg and milk together,  add breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, Italian seasoning, and red pepper flakes. Mix well.

Add ground beef and pork into mixture and gently stir to combine.

Coat baking sheet with olive oil. Scoop Tbsp of meat mix and roll into ball. Place meatballs on baking sheet. 

Bake meatballs for 12-15 minutes at 350° F until almost fully cooked.

SOUP INGREDIENTS – Olive Oil – Carrots – Diced Onions – Minced Garlic – Chicken Broth – Acini de Pepe – Tuscan Kale

Heat oil in large pot over medium heat. Sauté carrots and onions for 4-5 minutes until soft. Add minced garlic and cook for 1 minute.

Add chicken broth to mixture and stir well.

Bring pot to a boil and add pasta to cook for 3 minutes. Add meatballs to soup along with kale, cook for additional 3-5 minutes on medium-low heat.

VARIATIONS - For quicker prep, use frozen meatballs. No need to thaw them first. - Use any meat you prefer.  - Use any small type of pasta you like.
