LASAGNA SOUP

EASY SOUP

This Lasagna Soup is ready in 25 minutes and made with juicy Italian sausage, tender noodles, herbs, and spices, in a tomato-based broth topped with two kinds of cheese!

- Olive Oil - Italian Sausage - Diced Onion - Minced Garlic - Tomato Paste - Chicken Broth - Diced Tomatoes - Dried Italian Seasoning - Salt - Lasagna Noodles - Mozzarella Cheese - Parmesan Cheese - Basil - Red Pepper - Flakes (optional)

In a large pot, add olive oil and Italian sausage and cook over medium heat for 5 minutes. Add onion and cook for additional 5 minutes.

Add minced garlic and tomato paste into the meat to combine and cook for another minute or until the sausage is completely browned.

Pour in the chicken broth and stir well. Then add diced tomatoes, Italian seasoning, salt, and red pepper flakes. Stir to thoroughly combine and bring the soup to a boil.

Add the lasagna noodles pieces and boil for 10-12 minutes or until the noodles are soft.

Add in the mozzarella and parmesan cheese and garnish with basil as well if desired.

VARIATIONS - Use hot Italian sausage for a spicier version - Swap the Italian sausage for ground beef, ground turkey or ground sausage - Swap the chicken broth for beef broth or vegetable broth
