MEDITERRANEAN COUSCOUS SALAD

DELICIOUS DISH

This Mediterranean couscous salad recipe is loaded with vibrant colors and fresh vegetables in every single bite. Pearl couscous, chickpeas, fresh cucumbers, tomatoes and tossed in a homemade dressing.

For the Vinaigrette – White Wine Vinegar – Dijon Mustard – Parsley – Garlic – Thyme – Extra Virgin Olive Oil For the Salad – Olive Oil – Pearl Couscous – Water – Chickpeas – Cucumbers – Cherry Tomatoes

Add all dressing ingredients into small bowl. Whisk together.

In large saucepan, warm olive oil then add couscous.

Add water to the pan, increase the temperature.

Cook couscous for 8 minutes then add chickpeas and heat for another minute.

Transfer couscous to large bowl and add in sliced fresh tomatoes and cucumbers.

Drizzle with vinaigrette dressing and season with salt and pepper.
