SALMON CROQUETTES

DELICIOUS DISH

This recipe is made with fresh salmon and simple sautéed veggies and seasonings. A favorite dinner of ours, they are pan fried to a golden brown and crispy on the outside and flaky on the inside.

Cook the salmon skin side down on low heat until cooked through.

Immediately remove skin and transfer cooked salmon to large bowl then use a fork to shred it.

In a separate skillet, sauté the bell pepper and onion. Then, add the minced garlic.

Add veggies to salmon. Add breadcrumbs, beaten egg, parsley, paprika, salt, and pepper and stir.

Heat olive oil in a skillet. Use your hands to scoop about ⅓-1/2 cup of the mixture and form them into patties.

Cook the patties for about 3-4 minutes on each side until golden brown.
