SHRIMP CORN CHOWDER

BEST FALL TREAT

Shrimp Corn Chowder is a comforting creamy soup that’s ready in less than 30 minutes. It's a perfect healthy, easy mea with juicy shrimp and tender veggiesl.

– olive oil – shrimp –  butter –  onion – carrots – celery – all-purpose flour – garlic  – fresh rosemary – chicken broth – corn kernels – heavy cream

Add the olive oil to a large  pot and heat over medium-high heat and add the shrimp in a single layer. Cook for 2 minutes per side then remove and set aside.

Add  butter to  same pot  and add the diced onion, carrots, and celery. Saute for 6-7 minutes until vegetables are tender.

Then add the flour, garlic, and rosemary and stir until the vegetables are coated in the flour and cook for about a minute.

Add one cup of broth and scrape the bottom of the pot with a wooden spoon to remove anything one the bottom.

Reduce the heat to low and add in the heavy cream, Then add shrimp back in.

VARIATIONS 1. Add finely diced potatoes. 2. Add cooked bacon.pieces. 3. Add diced red bell pepper. 4. Add red pepper flakes, a dash of cayenne pepper or your favorite hot sauce.
