HAMBURGER VEGETABLE SOUP

 BUSY NIGHT SOUP

Quick soup made with simple ingredients including ground beef, loads of mixed veggies, chunky potatoes, and a flavorful tomato-based broth

– lean ground beef – onion  – minced garlic  –  tomato paste –  Italian seasoning – beef broth – canned diced tomatoes – frozen mixed vegetables – russet potatoes

In a large soup pot, add  ground beef and onion and cook over medium-high heat for 5-7 minutes until beef is browned. Then add garlic, tomato paste, and Italian seasoning

Stir in the beef broth, diced tomatoes, frozen vegetables and potatoes.

Bring to a boil then reduce to low and cook for 20 minutes until  potatoes are tender.

Top with parmesan cheese if desired.

VARIATIONS 1 If 80/20 ground beef is used, drain grease after browning. 2. Swap the beef for ground pork, ground chicken, ground turkey or Italian sausage! 3. Use water, vegetable broth or chicken stock in place of beef broth. 4. Swap the potatoes for elbow noodles
