YELLOW SQUASH SOUP

DELICIOUS SOUP

This yellow squash soup recipe is creamy and thick, yet light and loaded with nutrients and such simple ingredients. Perfect for a quick lunch, light dinner, or as a starter to any meal!

– Olive Oil – Yellow Onion – Carrot – Celery – Yukon Gold Potatoes – Yellow Squash – Garlic – Thyme – Vegetable Broth – Heavy Cream – Butter

In large pot, cook onion, carrot, celery, potato, and squash then add minced garlic and thyme.

Stir in vegetable broth.

Use a blender to puree the soup until smooth.

Swirl in heavy cream and melt in butter.

Garnish with roasted yellow squash, sour cream, fresh thyme, or fresh basil.
