Roasted Carrots

Roasted Carrots are a fabulously simple yet extremely flavorful way to a another healthy side to any meal.

Ingredients

  • 1 pound of baby carrots
  • 3 TBSP Olive Oil
  • 2 cloves garlic minced
  • 1 teaspoon of balsamic vinegar
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees.
  • Place carrots on a baking sheet and toss with olive oil, garlic, balsamic vinegar and thyme
  • Bake for 30 minutes or until the carrots are tender
  • Serve hot, warm or at room temperature.
  • These will keep for four to five days in the refrigerator.
