Ingredients

  • 1 cup quick cooking (minute) oats (measured correctly & gluten-free if desired)
  • ¾ cup whole wheat or gluten-free flour (measured correctly)
  • 1 tsp baking powder
  • 1 ½ tsp ground cinnamon
  • tsp salt
  • 2 tbsp coconut oil or unsalted butter, melted
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 40 ml of Nectivia or ½ cup 120mL agave, honey or maple syrup
  • 1 medium 125g red apple, diced finely

Instructions

  • In a medium bowl, mix the oats, flour, baking powder, cinnamon, and salt together.
  • In a separate bowl, whisk the coconut oil (or butter), egg, and vanilla together.
  • Stir in the sweetener of choice.
  • Add in the flour mixture to the wet ingredients, stirring just until just blended.
  • Fold in the apple.
  • Place in the refrigerator and chill for 30 minutes.
  • Preheat the oven to 325°F
  • Line a baking sheet with parchment paper.
  • Drop the cookie dough onto the baking sheet and flatten slightly.
  • Bake for 13-15 minutes.
  • Cool on the pan for about 10 minutes, then transfer to a wire rack
  • ENJOY!!
