This easy Corn Salsa is bursting with fresh flavors! It's simple to make with simple ingredients and wonderful to dip with tortilla chips or as a topping on any of your favorite Mexican dishes!
In a medium bowl, combine all the remaining ingredients and mix well.
1 medium tomato, ¼ medium red onion, 2 tablespoons lime juice, 1 avocado, ⅓ cup fresh cilantro
Add the cooked corn and garlic (once cooled) and mix thoroughly again.
Serve with tortilla chips.

Bell Peppers: Add diced bell peppers for an extra crunch and a pop of color.
Black Beans: Add black beans for added protein and fiber.
Cheese: Sprinkle in some cotija or feta cheese.
Mango: For a sweeter version, add diced mango.
Cucumber: seeded diced cucumber gives a refreshing crunch
Spicy kick: add diced jalapeño pepper or a dash of chili powder.
If using whole tomatoes, I like to remove the seeds to the salsa is less watery.Thaw frozen corn and drain any excess liquid before sautéing.You can grill the corn instead of sautéing if you'd like. It's really good!
