Garlic Mashed Cauliflower

This Garlic Mashed Cauliflower is a fabulous, low carb alternative to mashed potatoes. Adding a little parmesan and cream cheese to gives it tons on flavor.

Ingredients

  • 1 head cauliflower cut into small pieces.
  • 1 TBSP cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove of garlic minced
  • 1/8 tsp chicken bullion powder
  • 1/8 tsp black pepper

Instructions

  • Bring a medium pot of water to a boil.
  • Add the cauliflower to the boiling water and cook for about 10 minutes or until tender.
  • Drain well in a colander. Pat dry with paper towels to remove any excess water.
  • Place hot cauliflower in a food processor.
  • Add the garlic, cream cheese, Parmesan, chicken bullion and pepper.
  • Puree for about 2 minutes or until almost smooth.
  • Garnish with chives, and serve hot.
