Garlic Mashed Cauliflower
This Garlic Mashed Cauliflower is a fabulous, low carb alternative to mashed potatoes. Adding a little parmesan and cream cheese to gives it tons on flavor.
- 1 head cauliflower cut into small pieces.
- 1 TBSP cream cheese
- 1/4 cup grated Parmesan cheese
- 1 clove of garlic minced
- 1/8 tsp chicken bullion powder
- 1/8 tsp black pepper
Bring a medium pot of water to a boil.
Add the cauliflower to the boiling water and cook for about 10 minutes or until tender.
Drain well in a colander. Pat dry with paper towels to remove any excess water.
Place hot cauliflower in a food processor.
Add the garlic, cream cheese, Parmesan, chicken bullion and pepper.
Puree for about 2 minutes or until almost smooth.
Garnish with chives, and serve hot.
