These healthy Banana Oat Chocolate Chip Breakfast Bars are one of the simplest recipes ever. They have no flour and no eggs and can be easily made gluten free and vegan as well.
Preheat oven to 350 degrees F. Spray 9x9 inch baking pan with nonstick cooking spray.
<strong>To make oat flour</strong> - Simply put the oats into a food processor or food processor and blend for 1-2 minutes, stopping to stir a few times. You want it to have the consistency of flour.
Pour the oat flour into a medium bowl and add the baking soda, baking powder, baking soda, cinnamon and salt.
Put the bananas, applesauce, honey and vanilla into the food processor or blender and blend for 1-2 minutes or until blended nice and smooth.
Add this to the oat flour and stir to combine.
Add in the ½ cup of chocolate chips and stir gently to blend in.
Pour batter into greased pan (I just use a little coconut oil) and spread evenly.
Bake for 15 minutes or until toothpick or knife comes out clean
Cool 10-15 minutes on wire rack.
<strong>To make the drizzle</strong> - put 2 tablespoon of chocolate chips and coconut oil in the microwave. Microwave on high 30 seconds
