These soft and buttery homemade Grinch Crinkle Cookies are easy green cookies rolled in sugar and topped with a sweet little red candy heart sprinkle. They are a fun Grinch themed dessert to add to your baking list this holiday season.
Preheat oven to 375° F and line a baking sheet with parchment paper.
In a medium mixing bowl, add the flour, baking powder and salt and mix together.
2 ½ cups all purpose flour, 1 tablespoon baking powder, ½ teaspoon salt
In a separate large mixing bowl, add the butter and sugar and beat on medium speed with an electric mixer. (you can also use the bowl of a stand mixer)
⅓ cup butter, 1 ½ cups white sugar
Add the vanilla and peppermint extracts and eggs one at a time, blending after adding.
2 teaspoon vanilla extract, ½ teaspoon peppermint extract, 2 large eggs
Then add in the dry ingredients gradually ½ cup at a time, blending after each addition until just barely incorporated. (careful not to overmix)
Add a few drops of food coloring and knead the dough to incorporate the color fully.
Green Food Coloring
Place white sugar on a small plate or in a shallow bowl.
White Sugar or powdered sugar for rolling
With a cookie scoop, scoop approximately tablespoon size scoops, roll into a ball and then roll in the white sugar (or powdered sugar) to coat thoroughly.
Place on lined baking sheet and press gently to flatten slightly.
Press a heart-shaped candy sprinkle into the center of each dough ball.
Bake for 8 minutes or until the bottoms are very slightly golden brown.
Allow to cool on the baking sheet for 2 minutes then transfer to a wire rack to cool completely.
