This easy one-pot Lasagna Soup is ready in 25 minutes and made with juicy Italian sausage, tender noodles, herbs, and spices, in a tomato-based broth topped with two kinds of cheese! It's a delicious recipe the whole family will enjoy during soup season!
In a large soup pot or dutch oven, add the olive oil and Italian sausage and cook over medium heat.
2 tablespoons olive oil, 1 pound Italian sausage
Cook the sausage, breaking it into small pieces, for 5 minutes.
Add the diced onion and cook for an additional 5 minutes, or until the onion is soft.

Next, add the minced garlic and tomato paste and mix into the meat to combine and cook for another minute or so until the sausage is completely browned.

Carefully pour in the chicken broth and stir well, scraping the bottom of the pot with a wooden spoon to remove any stuck on bits.

Add the diced tomatoes, Italian seasoning, salt, and red pepper flakes (if using). Stir to thoroughly combine and bring the soup to a boil.

Then add the lasagna noodles pieces and boil for 10-12 minutes or until the noodles are soft, stirring often so the noodles to not stick together.

Add in the mozzarella and parmesan cheese or leave it out and garnish individual bowls

Garnish with fresh basil leaves if desired.

Store leftover soup in an airtight container in the refrigerator for up to 3-4 days.Use any cooking oil to help the sausage not stick to the pot while browning.Swap the Italian sausage for ground beef, ground turkey or ground sausage.Use hot Italian sausage for a spicier version.Add more chicken broth the soup is too thick after the noodles cook.Swap the chicken broth for beef broth or vegetable broth.Add diced green peppers or red bell peppers or other favorite veggies like zucchini or mushrooms.Use crushed tomatoes if you'd like smaller chunks of tomatoes.Add as much red pepper flakes as you'd like.Use any type of pasta you'd likeUse Romano cheese or asiago cheese.Serve with a dollop of ricotta cheese or cottage cheese if desired.
