Roasted Carrots are a fabulously simple yet extremely flavorful way to a another healthy side to any meal.
- 1 pound of baby carrots
- 3 tablespoon Olive Oil
- 2 cloves garlic minced
- 1 teaspoon of balsamic vinegar
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Preheat the oven to 375 degrees.
Place carrots on a baking sheet and toss with olive oil, garlic, balsamic vinegar and thyme
Bake for 30 minutes or until the carrots are tender
Serve hot, warm or at room temperature.
These will keep for four to five days in the refrigerator.
