Cucumber Feta Bites

hese Cucumber Feta Bites are a wonderful, fresh appetizer to make and serve at any get together. They are so easy to make and healthy to eat.

  • 1 english cucumber
  • 1 tablespoon of feta cheese
  • 3 tablespoons of plain fat free Greek Yogurt
  • 2 teaspoons of light cream cheese
  • ¼ cup Sliced almond optional


  • In a small bowl, mix the feta cheese, Greek yogurt and cream cheese together well.
  • Slice the cucumber in half the long way.
  • Scoop the pulp out of center of each side of the cucumber.
  • Split the feta mixture to each cucumber half and spread it on the cucumber halves.
  • Top with sliced almonds.
  • Slice the cucumber into about 1 inch pieces.
  • Optional: Add the cucumber pulp to the feta mixture. I did this. It is a little more liquidy but so yummy.
