Apple Cinnamon Quinoa Bites

These wonderful little Apple Cinnamon Quinoa Bites are a fantastic quick and healthy breakfast or snack

Ingredients

  • 1 cup quinoa cooked
  • 1 cup oats uncooked
  • 1 cup chopped apples
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup maple syrup
  • 2 eggs lightly beaten

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, add your cooked quinoa, oats and apple.
  • In a separate smaller mixing bowl, combine cinnamon, nutmeg, maple syrup and eggs and mix until combined.
  • Then add spice mixture to quinoa mixture and toss until blended well.
  • Coat or spray your mini muffin pan with coconut oil or non-stick cooking spray. Put a little oil on the top of the pan as well for any over flow.
  • Fill each muffin hole with 1 tablespoon of the mixture.
  • Bake for about 15-20 minutes.
