Apple Cinnamon Quinoa Bites
These wonderful little Apple Cinnamon Quinoa Bites are a fantastic quick and healthy breakfast or snack
- 1 cup quinoa cooked
- 1 cup oats uncooked
- 1 cup chopped apples
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ cup maple syrup
- 2 eggs lightly beaten
Preheat oven to 350 degrees.
In a large mixing bowl, add your cooked quinoa, oats and apple.
In a separate smaller mixing bowl, combine cinnamon, nutmeg, maple syrup and eggs and mix until combined.
Then add spice mixture to quinoa mixture and toss until blended well.
Coat or spray your mini muffin pan with coconut oil or non-stick cooking spray. Put a little oil on the top of the pan as well for any over flow.
Fill each muffin hole with 1 tablespoon of the mixture.
Bake for about 15-20 minutes.
