Banana Coconut Muffins

These Banana Coconut Muffins are a yummy, clean eating recipe using coconut flour for wonderful flavor!

  • ½ cup Coconut Flour
  • 1 teaspoon ground nutmeg
  • ½ teaspoon baking powder
  • ¼ cup Coconut Oil melted
  • 4 large eggs or ¾ cup of liquid egg whites
  • 1 teaspoon vanilla
  • 2 ripe bananas mashed
  • ½ cup blueberries frozen or fresh (optional)
  • ½ cup chopped pecans optional


  • Preheat oven to 350 degrees.
  • Mix coconut flour, baking powder and nutmeg.
  • In a separate mixing bowl, add the coconut oil, honey or agave, vanilla. and egg whites or eggs beaten gradually
  • Add the mashed bananas to the egg and oil mixture and mix well.
  • Add in the flour mixture and mix well.
  • Prepare 12 muffin cups with liners or greased with a little coconut oil and fill the cups with the batter.
  • Bake at 350 degrees for 20 minutes.
