2 ½ cups oat flour ½ cup organic coconut sugar ¼ teaspoon salt 1 teaspoon cinnamon ¼ teaspoon cloves ¼ teaspoon of nutmeg 1 tablespoon baking powder ½ cup raisins 1 tablespoon molasses 1 tsp. vanilla 4 oz of unsweetened apple sauce or 1 apple diced 3 eggs 1¼ cup milk 1 tablespoon coconut oil For the Topping: 3 tablespoon oats 2 tablespoon organic coconut sugar or brown sugar
Preheat oven to 350 degrees F
Combine the dry ingredients in a large bowl.
In a food processor combine the raisins, molasses, vanilla and applesauce (or diced apple) and pulse a few times to blend
In a smaller bowl combine the eggs, milk and oil.
Add the wet ingredients to the dry ingredients and mix gently.
Stir in the molasses mixture.
Grease the muffin tin with coconut oil
For the Topping: In a small bowl mix together the above ingredients.
Sprinkle topping mixture on each muffin.
Bake 15 – 18 minutes or until a toothpick comes out clean.
