Ingredients

  • 2 ½ cups oat flour
  • ½ cup organic coconut sugar
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon of nutmeg
  • 1 tablespoon baking powder
  • ½ cup raisins
  • 1 tablespoon molasses
  • 1 tsp. vanilla
  • 4 oz of unsweetened apple sauce or 1 apple diced
  • 3 eggs
  • cup milk
  • 1 tablespoon coconut oil

  • For the Topping:
  • 3 tablespoon oats
  • 2 tablespoon organic coconut sugar or brown sugar

Instructions

  • Preheat oven to 350 degrees F
  • Combine the dry ingredients in a large bowl.
  • In a food processor combine the raisins, molasses, vanilla and applesauce (or diced apple) and pulse a few times to blend
  • In a smaller bowl combine the eggs, milk and oil.
  • Add the wet ingredients to the dry ingredients and mix gently.
  • Stir in the molasses mixture.
  • Grease the muffin tin with coconut oil
  • For the Topping: In a small bowl mix together the above ingredients.
  • Sprinkle topping mixture on each muffin.
  • Bake 15 – 18 minutes or until a toothpick comes out clean.
