In a large bowl, mix together oats, milk, applesauce, maple syrup, cinnamon, coconut oil, vanilla, baking powder, and salt.
Add ¾ cup of the diced apples and fold in gently.
Pour mixture into the prepared baking dish and top with the remaining ¼ cup of diced apples.
Bake about 40-45 minutes or until a toothpick comes out clean.
Allow baked oatmeal to cool slightly before serving.
Cool completely before storing in an airtight container the refrigerator for up to 5 days.
