DOUBLE  CHOCOLATE  ZUCCHINI BREAD

EASY SNACK

This double Chocolate Zucchini Bread is moist, fluffy, and made with double the chocolate and flecks of fresh zucchini! An easy quick bread for breakfast or dessert!

–  butter  –  sugar – milk – egg –  vanilla extract – all-purpose flour – unsweetened    cocoa powder –  baking powder –  baking soda –  ground cinnamon –  shredded zucchini –  chocolate chips

Preheat oven to 350° F Line a 9×5 loaf pan with parchment paper or spray it lightly with baking spray.

In a mixing bowl, add the melted butter and sugar and whisk until combined.

Then add the egg, milk and vanilla and mix well.

Add the dry ingredients to the wet ingredients and stir until they are just barely incorporated. Be careful not to over-mix

add the shredded zucchini and chocolate chips and gently stir

Pour the batter into the greased pan and bake for 50-55 minutes

Allow the bread to cool in the pan for 10 minutes. Then move it to a wire rack to cool completely.

TIPS

1. Use dark, semi-sweet or milk chocolate chips. 2. Substitute unsweetened applesauce for butter for lower calories. 3.Use gluten free flour. 4. Add chopped walnuts or pecans. 5. Add ½ cup of raisins if desired.
