GUINNESS CHOCOLATE CUPCAKES

DELICIOUS TREAT

Guinness Chocolate Cupcakes are infused with Guinness beer that deepens the chocolate flavor so deliciously!! These are topped with an easy home-made buttercream frosting! Perfect for St. Patricks Day!

CUPCAKE INGREDIENTS – Guinness Extra Stout – Vegetable Oil – Whole Milk – Eggs – Vanilla Extract – White Sugar – Flour – Cocoa Powder – Baking Powder

Simmer Guinness in small saucepan over medium-low heat. Stir often until reduced down to about ½ cup. Set it aside to cool completely .

In a large bowl, whisk together the oil, milk, eggs, and vanilla. Add ¼ cup of the cooled Guinness reduction and blend in sugar, then stir.

Add the flour, cocoa, and baking powder to the wet ingredients and mix until there are no clumps.

Pour batter equally between the cupcake tin, filling each about ¾ of the way full.

Bake for 16-18 minutes at 350°F. Transfer cupcakes to a wire rack to cool completely before adding the frosting.

FROSTING INGREDIENTS – Butter – Chocolate Chips – Powdered Sugar – Reduced Guinness – Vanilla Extract

Beat butter and melted chocolate in mixing bowl for one minute. Gradually add powdered sugar. Add 2 Tbsp of reduction and vanilla. Beat on medium speed for 2 minutes or until fluffy.
