SWEET POTATO CASSEROLE

DELICIOUS DISH

Impress your guests with a healthy sweet potato casserole lightly sweetened with maple syrup and warm spices topped with a crunchy oat and pecan topping! 

In large pan, add sweet potatoes chunks and boil until tender.

Drain water then mash potatos until smooth.

In small bowl, mix maple syrup, milk, egg, vanilla, cinnamon, nutmeg, and salt then add to potatoes.

In a separate bowl, mix the oats, pecans, cinnamon, and salt.  Add in melted butter and mix.

Place sweet potato mixture in baking dish and spread evenly. Sprinkle oat topping on top then bake.
