Cut cauliflower head into smaller pieces and pulse in a food processor. You want it to resemble rice.
Place in a microwave safe bowl, cover and microwave for 10 minutes.
Squeeze out as much water as possible using a cheesecloth.
Add all other ingredients to a large bowl and blend well.
Add cooked cauliflower to other mixed ingredients and mix well.
Line 2 baking sheets with parchment paper
Divide the cauliflower mixture in half and spread the baking sheets. I make mine into a rectangle shape. You want it to be thin.
Bake at 425 degrees F for 25 minutes.
If you'd like it a little extra cheesy, sprinkle with additional cheese and bake again until the cheese is melted.

Nutritional information doesn't include the extra added cheese.You can also bake the cauliflower in the oven for 20 minutes at 375 degrees F.Be sure to squeeze all the water out of the cauliflower. Up to a cup of liquid is expected.
