Notes
Store zucchini bread in an airtight container at room temperature for up to three days.Swap the Greek yogurt for sour cream or even unsweetened applesauce if you'd like.Make sure to measure using the spoon and level method when measuring the flour. The combination of baking powder and baking soda result in a super light and airy zucchini bread. I highly recommend using both!Use the largest setting on a box grater or food processor attachment to grate the zucchini and then gently squeeze or place it in paper towels to remove any excess moisture.Add 1 cup of chocolate chips or raisins or both.Add ½ cup of chopped pecans or walnuts.Use a gluten free one-to-one flour like Bob's Red Mill One-to-One if desired.
