Strawberry cookies are the easiest way to make yourself a quick and easy sweet treat. With just 5 minutes of prep time and 8 minutes of bake time, you can enjoy soft strawberry cookies anytime!
Preheat the oven to 350° F and line two baking sheets with parchment paper.
In a large bowl, add the cake mix, oil, and eggs and mix until just barely combined.
13.25 ounce box strawberry cake mix, ⅓ cup canola oil, 2 large eggs
Add ⅔ cup of white chocolate chips and gently stir into the cake batter.

Using a 1 ½ tablespoon cookie scoop, scoop the cookie dough onto the lined baking sheets
Press the remaining ⅓ cup of chocolate chips into the tops of each cookie dough ball.
Bake for 8-10 minutes
Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes. Then transfer them to a wire rack to cool completely.

Store cookies at room temperature in an airtight container for up to 3-4 days.Freeze the completely cooled cookies in a freezer bag or airtight container for up to 3 months. Thaw the cookies at room temperature before eating.Swap the oil for melted butter or another oil like vegetable oil, lightly softened coconut oil, grapeseed oil.For a 15.25 ounce box of cake mix, increase the oil to ½ cup. Use semi-sweet chocolate chips or milk chocolate chips instead of white chocolate.Top with sprinkles before baking.Make them smaller or larger in size.
