Skip the frying and make this easy air fryer chicken parmesan recipe. It's an easy, lighter version of the classic crispy chicken cutlet smothered in tomato sauce with melted mozzarella cheese!
Slice each chicken breast in half lengthwise into thin fillets approximately ½ -⅓ inch
2 pounds chicken breast
In a shallow bowl, add the eggs and salt and whisk together.
2 large eggs, 1 teaspoon salt
Place the breadcrumbs in a separate shallow bowl.
1 ½ cup breadcrumbs
Dredge each chicken piece in the egg mixture, coating both sides and then place it with breadcrumbs and coat both side again. I like to press the coating onto the chicken well so it's nice and crispy. Place the coated chicken on a plate, set aside and repeat with remaining pieces.
Preheat your air fryer to 360° F.
Place 2 pieces of chicken in the air fryer basket allowing room between them to get crisp.
Spray or drizzle with olive oil and cook for 6 minutes.
1 tablespoon olive oil
Flip the chicken over and add 1 to 2 tablespoons of marinara sauce and sprinkle mozzarella and parmesan cheese on top of each piece.
½ - ¾ cup marinara sauce, 1 cup mozzarella cheese, 1 cup parmesan cheese
Cook for an additional 3 minutes until the cheese melts.
½ teaspoon dry oregano or fresh basil
Sprinkle with dry oregano or fresh basil
Notes
Use homemade marinara sauce or your favorite jarred spaghetti sauce.Use chicken tenders if desired.
