This Cajun Chicken Pasta is everything you want in an easy weeknight dinner. The creamy sauce is loaded with flavor and it's made with simple ingredients of chicken, bell peppers, canned tomatoes, cream and spices.
Add the sliced onions, peppers, onion, garlic chicken broth, tomatoes, ½ cup of the heavy cream and remaining Cajun seasoning. Stir to combine.
1 red onion, 1 red pepper, 1 yellow pepper, 2 cloves garlic, 29 ounces chicken broth, 14.5 ounces fire roasted tomatoes, ¾ cup heavy cream
Cover with the lid and cook on high for 3 hours or low for 4-5 hours.
Make the slurry. About 30-40 minutes before done, mix the the cornstarch and water together in a small measuring cup or bowl and add it into the slow cooker.

Add the uncooked pasta and stir gently.
12 ounces penne pasta
Place the lid back on and stir about every 10 minutes until pasta is al dente.
Once the pasta has cooked to your desired tenderness, add in the remaining ¼ cup heavy cream, shredded parmesan cheese, salt and pepper and stir to combine.

Store in a airtight container in the refrigerator for 3-4 days.Cook the noodles on the stovetop instead of adding them in if you'd like.Use any type of pasta like rigatoni, rotini or linguine.
