Mix the oats, cinnamon, nutmeg, cloves and ginger together in a medium sized bowl.
In a small bowl, mix the pumpkin puree, maple syrup, coconut oil, and vanilla extract together.
Then, pour the liquid mixture over the oats mixture and stir to evenly coated.
Spread everything out on a baking sheet.
Bake for about 30 minutes, stiring ever 10-15 minutes.
Add the pecans and bake for an additional 15-20 minutes until it's dry, stirring half way through.
Cool completely and then stir in the raisins.
Store in an airtight container.
Notes
Substitute the pecans for any nut of choice. Almond slices, pumpkin seeds, walnuts and pistachios are all great options too.If using pecans or walnuts, add them into the granola after toward the end of baking to avoid burning (for about the last 20 minutes)Use honey in place of maple syrup if desired.Cooking times may vary based on oven.
