Carrot Cake Energy Bites
These Carrot Cake Energy Bites are a yummy treat made with simple ingredients. They make a perfect little snack to have ready to munch on.
Servings 24 bites
- 1 cup rolled oats
- ½ cup shredded carrots
- ¼ cup raisins
- ¼ cup chopped almonds
- ½ teaspoon cinnamon
- ⅛ teaspoon cloves
- ⅛ teaspoon nutmeg
- ⅓ cup almond butter
- ¼ cup maple syrup
In a mixing bowl, mix together oats, shredded carrots, almonds, raisins, and cinnamon.
Add almond butter and maple syrup and mix together thoroughly.
Place mixture in the refrigerator for one hour.
Shape into one-inch bites.
Substitute chopped pecans for the almonds if desired.
Substitute honey for the maple syrup if desired.
