This easy cucumber tomato avocado salad is tossed with diced chicken, feta cheese, and a zesty balsamic vinaigrette. I love the flavors and it is so perfect for lunch or light, healthy dinner idea.
1.5 cups cooked chicken, 1 avocado, 1 large cucumber, ½ cup cherry tomatoes
Add the cheese and nuts if using.
⅓ cup feta cheese, ½ cup pecans
Drizzle the balsamic vinaigrette over top and toss gently to mix together.

Use our homemade balsamic vinaigrette or other favorite bottled balsamic dressing.Use shrimp, steak or tofu instead of chicken.Swap the feta for goat cheese, blue cheese or shaved parmesan cheese.Mix in some arugula or baby spinachUse walnuts or sliced almonds instead of pecans.Add diced bell peppers or red onions for even more flavor.Use regular tomatoes and cut into cubes. I like to remove the seeds so the salad isn't as watery.
