Tomato Cucumber Avocado Salad with Chicken
This refreshing salad is a crowd-pleaser whenever I make it. Its fresh, simple ingredients and bold flavors from the balsamic vinegar are so delicious.
Because it’s so easy, it makes a great fresh salad to bring as a side dish for a barbecue or potluck. I will buy pre-cooked grilled chicken or a rotisserie chicken to dice when I’m short on time. It has been a summer favorite salad in my house especially when we can use fresh veggies from the garden or farmer’s market!
Ingredients for this Cucumber Avocado Salad
Below is a list of the ingredients you’ll need to gather to make this easy recipe. Scroll down to the full recipe card for individual amounts.
- Chicken: cooked and diced into cubes. You can use a rotisserie chicken or any pre-cooked chicken.
- Avocado: diced into small cubes. Use a ripe avocado for the best flavor and creaminess.
- Cucumber: I use a Persian or English cucumber since they tend to be less watery than regular cucumbers. If you use a regular cucumber instead, cut in half and scrap the seeds out before slicing and dicing.
- Cherry Tomatoes: Feel free to use grape or regular tomatoes too. If using a regular large tomato, remove as many seeds as possible before dicing.
- Feta cheese: Adds a wonderful tangy, salty flavor.
- Pecans: (optional) Adds a delicious nutty crunch. I love to roast the nuts too. Tip: You can quickly roast pecan in the microwave on a paper towel for 30-45 seconds.
- Balsamic Vinaigrette: I make my own homemade balsamic vinaigrette but use any favorite brand if you’d like.
- Salt and pepper to taste.
Variations/Substitutions
- Swap the chicken: Use shrimp, steak, tofu or chickpeas instead of chicken.
- Change the cheese: Try goat cheese, blue cheese or shaved parmesan cheese.
- Add greens: Mix in some arugula or baby spinach.
- Different nuts: Use chopped walnuts or sliced almonds instead of pecans.
- Extra veggies: Add diced bell peppers or sliced red onions for more flavor.
- Add fresh herbs: Add chopped basil or cilantro.
- Different dressing: Use any favorite dressing you’d like. A lemon dressing or simply dashes of olive oil and red wine vinegar or balsamic vinegar with sprinkles of Italian seasoning are wonderful too.
How to Make the Salad Recipe
Step 1: Dice the chicken, avocado, cucumber, and tomato.
Step 2: Combine all the salad ingredients in a large salad bowl.
Step 3: Add the feta cheese and pecans if using.
Step 4: Drizzle with balsamic vinaigrette dressing.
Step 5: Toss gently to mix everything together!
How to Store Leftovers
- Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezing: This salad is not ideal for freezing due to the fresh veggies and avocado.

Yes, you can prepare the ingredients ahead of time but store the dressing separately until ready to serve.

Instructions
- In a large bowl, all the salad ingredients.1.5 cups cooked chicken, 1 avocado, 1 large cucumber, ½ cup cherry tomatoes
