This easy classic bruschetta recipe is a perfect appetizer for parties and holiday gatherings. It has favorite Italian flavors of chopped fresh tomatoes and basil served on toasted baguette slices.
Dice the tomatoes and place in a medium bowl. Add the parmesan cheese, basil, garlic, balsamic vinegar and olive oil and stir to combine well.
6 roma tomatoes, ¼ cup Parmesan cheese, ¼ fresh basil, 3 cloves garlic, 1 tablespoon balsamic vinegar, salt and pepper to taste, 2 teaspoons olive oil
Slice the bread into thin slices (approximately ¼ inch thick)
1 loaf baguette, 2 tablespoons olive oil
Place them on a baking sheet and brush each side with olive oil.
Place in the oven and bake for 10 minutes. Turn over halfway through if desired.
After toasting the baguette, spoon the tomato mixture onto each slice.
Notes
Use cherry or grape tomatoes if desired.Sprinkle parmesan cheese onto the slices of bread before baking then top with tomatoes.Use fresh mozzarella balls instead or in addition to the parmesan cheese in the tomato mixture.
