The Best Tomato Bruschetta – A Favorite Every Time I Make It
Whenever I need a quick appetizer this classic Italian appetizer always pops in my head. It is made with such simple ingredients in just a few minutes and is always a huge hit.
I love that you can make the tomato mixture several hours in advance and just assemble it quickly before serving. Sometimes I just place the bowl of the marinated tomatoes on a platter with the toast and let everyone spoon it on themselves.

Ingredient Needed

- Baguette loaf – Use either French or Italian bread. The thin baguettes are a great size for serving as an appetizer.
- Olive oil – You will use some to baste on the bread as well as in the tomato topping as well. I use extra virgin olive oil but any you’d like is fine.
- Tomatoes – I like to use Roma tomatoes. But feel free to use fresh summer tomatoes or use cherry tomatoes or grape tomatoes.
- Parmesan cheese – Fresh shredded is best but pre-shredded is fine as well. You can also add some diced fresh mozzarella cheese, feta cheese, or goat cheese too.
- Fresh basil leaves – Chop fresh basil for the best flavor.
- Garlic cloves – Use fresh minced or jarred garlic if fine too.
- Balsamic vinegar – any favorite brand
- Salt and pepper to taste
How to Make Our Italian Bruschetta Recipe
Make this traditional bruschetta recipe so quick anytime you need a quick appetizer.
Step 1: Preheat oven to 375° F


Step 2: Dice the tomatoes and place them in a medium bowl. Add the parmesan cheese, basil, garlic, balsamic vinegar and olive oil and stir to combine well.


Step 3: Slice the bread into thin slices (approximately ¼ inch thick) and place them on a baking sheet and brush each side with olive oil.
Step 4: Place the sheet pan in the oven and bake for 10 minutes. Turn over halfway through if desired.

Step 5: Use a slotted spoon to spoon the bruschetta mixture onto each slice of toasted bread.
Enjoy them cold or pop them back in the oven for 3-5 minutes if desired. You can top with more parmesan and drizzle with a little balsamic glaze too if you’d like!
Tip
If you have time to let the diced tomatoes mixture marinate for 30 minutes for the flavors to meld.

How to Store
Refrigerate: Store the topping mixture in an airtight container in the refrigerator for up to 4 days.
I don’t recommend freezing the bruschetta mixture. But you can freeze the bread for up to 2 months then thaw and toast the slices.
