These buffalo chicken sliders are an easy appetizer to make with shredded chicken, buffalo sauce, cheese and ranch dressing all in soft Hawaiian rolls. They are a favorite for any party or game day get together.

If you have a thing for buffalo dip anything like me, these are a must make. They are so quick to make with simple ingredients and they disappear so fast anytime I make them (so you may want to buy enough ingredients to make a double batch.
We love them so much that my family even asks me to make them for dinner, I just serve them with sweet french fries or roasted potatoes for a perfect easy meal.

Ingredients You’ll Need

- Hawaiian Roll Slider – I love King’s Hawaiian rolls brand but you can use any small dinner rolls too. Don’t separate the rolls before slicing.
- Chicken breasts– I cook and shred 2 boneless skinless chicken breasts. Cooked and shredded. Use shredded rotisserie chicken for a quick prep.
- Buffalo Sauce – I like Frank's Red Hot buffalo sauce. But use any favorite brand you like, mild or spicy buffalo.
- Ranch Dressing – I use Hidden Valley Ranch usually. You can swap the ranch for blue cheese dressing.
- Dry Ranch Dressing Mix – I either use a Hidden Valley Ranch seasoning packet or Trader Joe’s jarred version. I save a little to sprinkle on top.
- Monterey Jack Cheese – I like to shred my own for the best melting. But feel free to use pre-shredded. Swap for mozzarella, Pepper Jack cheese or white cheddar cheese if you’d like.
- Butter: to brush on top for added flavor and to get that golden brown. Sprinkle with reserved ranch dressing or even garlic powder or garlic salt.
Variations to Try
1. Add a little slaw on top of the 2nd layer of cheese before baking.
2. Add sliced jalapeños, banana peppers or more hot sauce on top of the chicken mixture layer.
3. Add in ½ cup of cooked and crumbled bacon.
Different Ways to Cook Chicken for Sliders
There are a few different ways to make chicken to use for these sliders. I like to shred my cooked chicken in a food processor because it is so fast! But you can use kitchen sheers or 2 forks to pull it apart as well.
1. Place the chicken breasts in a baking dish, cover with foil and bake at 375° F for 30 minutes until no longer pink.
2. Place the chicken breasts in a pot and cover the chicken with water. Bring to boil, reduce heat to simmer and boil for 15-20 minutes. Remove from heat and place on a plate and let it rest for 10 minutes.
3. Cook the chicken breasts in a slow cooker for 3-4 hours on high. I love making big batches of this to freeze and have ready for anytime for recipes like this.
How to Make Buffalo Chicken Sliders
Step 1: Preheat the oven to 350° F.


Step 2: In a medium bowl, add the cooked chicken, buffalo sauce, ranch dressing, and all but a teaspoon of the dry ranch dressing mix in a large bowl until evenly coated.
Step 3: Using a serrated knife, slice the rolls in half horizontally. do not separate them individually.


Step 4: Lay the bottom half with the cut-side facing up into a baking dish or baking sheet. (you can lightly grease the pan if you like with cooking spray).
Step 5: Sprinkle half of the cheese over the bottom half of the buns.


Step 6: Next, spread the chicken mixture over the cheese. Then sprinkle the remaining cheese over the chicken and carefully place the tops of the rolls.

Step 7: Brush the melted butter on the bun tops and sprinkle with the remaining dry ranch mix.
Step 8: Place in the preheated oven for 10-12 minutes until the tops are brown and the cheese is melted.

Step 9: Remove from oven, slice into 12 sliders and serve warm. (if you need to re-warm them, just cover them with aluminum foil
How to Store Leftovers
Refrigerate: place in leftovers in an airtight container or zip closure baggie and store in the refrigerator for up to 3-4 days.
Freeze: Freeze in a freezer bag for up to 2 months.
Reheat: Place on a baking sheet and heat at 350° F until heated through. Or reheat in the microwave at 60% power level for 20-30 seconds.

- 8 ounces Monterey Jack cheese shredded, divided
- 3 cups finely shredded cooked chicken breast warmed
- ¼ cup buffalo sauce I like Frank's Red Hot Regular buffalo sauce
- ¼ cup ranch dressing
- 3 tablespoons ranch dressing mix divided
- 2 tablespoons butter melted
Instructions
- Preheat the oven to 350° F
