Roast Beef Slider Recipe
I’m a sucker for sliders. Making mini versions of things, like ham and cheese puff pastry and cranberry brie bites, brings me joy! I’m actually a sucker for appetizers in general, which is why you’ll find plenty in my collection of appetizer recipes.
So when I first took my favorite French Dip sandwich and turned it into a tasty, easy-to-serve slider, I was in Heaven! It’s a sandwich that you dip into a salty beef broth – there’s nothing like it.
They can feed a large crowd on game day, be made for an easy weeknight dinner, or keep it on rotation for busy weeknights. It’s made with simple ingredients, yet tastes incredible, and because they’re small, they’re the perfect size for packing in school lunches.
These French Dip sliders are filled with the same beef and onion mixture that you love – but in a smaller package that fits right in your hand.
Ingredients/shopping list
Below is a list of the ingredients you’ll need to gather to make this easy recipe. Scroll down to the full recipe card with amounts.
- Butter: There will be salt in the gravy mix as well as the roast beef. We’re also adding salt, so I would use unsalted butter to prevent the sliders from tasting too salty.
- Onion: A white or yellow onion will taste best; make sure it’s sliced extra thinly.
- Garlic Powder: Don’t confuse this with garlic salt!
- Salt and Pepper: Use just enough to enhance all the other flavors.
- Hawaiian Sweet Rolls: These fluffy sweet Hawaiian rolls come in sheets that are great for making pull-apart sandwiches as well as ensuring everything bakes without things falling apart.
- Sliced Deli Roast Beef: If possible, ask for it to be extra thinly sliced.
- Provolone Cheese: Melty provolone is the traditional cheese used in a French dip sandwich.
- Dry Onion Soup Mix: This will be mixed with butter and brushed overtop the buns before baking, giving it an extra yummy flavor.
- Au Jus Gravy Mix: Put the dip in French dip!
- Fresh Parsley: This herb is an optional garnish.
Variations/ Substitutions
These easy French dip sliders are customizable! Here are a few different ways to make your sliders taste just how you want them to.
1. Onions – Onions – Instead of sautéed onions, fill the sliders with French-fried onions. It adds a different texture and saves you some time.
2. Worcestershire Sauce – Mix a teaspoon of Worcestershire sauce with the butter and use that on top of the Hawaiian rolls.
3. Au Jus Gravy – Make a homemade gravy with beef broth, Worcestershire sauce, and a cornstarch slurry.
4. Seeds – Brush with melted butter and sprinkle the tops of the buns with some poppy seeds or sesame seeds.
5. Cheese – Instead of provolone cheese, use either American or cheddar cheese.
6. Sauces – Add either mustard (yellow or Dijon mustard) or mayonnaise to the rolls before adding the roast beef.
7. Minced Onion – If you don’t want to use the onion soup mix, you can use dry minced onions and a little salt mixed with the butter.
How to Make This French Dip Slider Recipe
This recipe will come together in a few easy steps and will produce the best smells coming from your kitchen!
Step 1: Sauté the onions: In a medium skillet, add the onions, butter, garlic powder, salt, and pepper and sauté over medium heat, stirring occasionally, until the onions are tender and begin to caramelize.
Step 2: Assemble the sliders: Slice the package of rolls in half, putting the top half aside and placing the bottom halves in the prepared baking dish.
Step 3: Layer the roast beef slices over the bottom half of the rolls. Then, add the sautéed onions on top of the roast beef.
Step 4: Next, add the slices of provolone cheese and place the other half of rolls on top.
Step 5: Mix the melted butter and onion soup mix in a small bowl. Brush this mixture on the top of the rolls using a pastry brush for an even coat.
Step 6: Cover with foil and bake for 15 minutes. Remove the foil and bake for another 5-10 minutes until the cheese has melted and the tops are golden brown.
Step 7: Prepare the au jus gravy: while the sliders are in the oven or cooling down a bit. Mix 3 cups of water with the packet of au jus seasoning mix in a small saucepan and heat over medium-high heat until it comes to a boil. Stir frequently. Lower the heat and let it simmer until it thickens.
Slice and serve your sliders warm with the au jus gravy on the side to dip in to. Enjoy!
Tips
- You can use traditional dinner rolls or slider buns instead of the King’s Hawaiian sweet rolls. Use whatever your favorite buns you normally use for pizza sliders, cheeseburger sliders, etc.
- In place of a baking dish, you can place the sliders on a baking sheet and bake them. Or wrap them in aluminum foil.
- Instead of deli roast beef for this recipe, use leftover pot roast or any leftover beef that you have.
- Use a serrated knife to slice through the entire package of rolls.
Storing Leftovers
Refrigerate: Store leftover sliders in an airtight container and keep them in the refrigerator for up to three days.
Freeze: You can also freeze them, too. Place them in a freezer bag and keep them in the freezer for up to three months.
Reheat: Heat the sliders in the oven or on in the microwave for 15-20 seconds until they are heated through .
FAQ’s
Honestly, they are the same thing. A beef dip sandwich is just another way of describing a French Dip sandwich.
I don’t recommend trying to use beef broth or beef stock instead of an au Jus sauce as the dip for your sandwich. The Au Jus has a bolder more seasoned and savory flavor.
To make the sliders spicier, add some sliced jalapenos or horseradish sauce on top of the roast beef.

Ingredients
- 2 tablespoons butter unsalted
- 1 medium onion sliced thin
- 1 teaspoon garlic powder
- 1 teaspoon pepper
- 1 teaspoon salt
- 12 Hawaiian Sweet Rolls
- 12 slices deli roast beef
- 12 slices provolone cheese
- 3 tablespoons butter unsalted, melted
- 2 tablespoons onion soup mix like Lipton brand
- 1 packet Au jus mix
- 3 cups water
- Garnish with fresh chopped parsley if desired
Instructions
- Preheat the oven to 375° F and spray a 9×13 baking dish with cooking spray or line with parchment paper.
- In a medium skillet, add the butter, sliced onion, garlic powder, pepper and salt.2 tablespoons butter, 1 medium onion, 1 teaspoon garlic powder, 1 teaspoon pepper, 1 teaspoon salt
- Sauté over medium heat until the onions are tender and caramelize.
- Carefully slice the Hawaiian rolls along the middle of the rolls creating a top and bottom half.12 Hawaiian Sweet Rolls
- Remove the top layer and place the bottom half of rolls in the prepared baking dish.
- Place the roast beef slices evenly over the bottom rolls.12 slices deli roast beef
- Then layer the sautéd onions and then place the provolone cheese over top of the cooked onions.12 slices provolone cheese
- Place the top layer of rolls over the cheese layer.
- In a small bowl, add the melted butter and onion soup mix and whisk together well.3 tablespoons butter, 2 tablespoons onion soup mix
- Brush the butter mixture evenly over the entire top of the rolls.
- Cover with aluminum foil and bake for 15 minutes. Then remove the foil and bake until the cheese is melted and tops are golden brown.
- While baking the sliders, add 3 cups of water and the au jus mix to a small pan and stir together well.1 packet Au jus mix, 3 cups water
- Heat to a boil over medium-high heat then lower the heat to simmer until sauce thickens.
- Slice and serve sliders warm and dip into the au jus sauce.
