Fresh sweet peaches never tasted so good than in this easy peach cobbler recipe! A delicious combination of fresh peach slices, warm cinnamon, and a golden brown homemade topping. Pairing this warm peach dessert with a scoop of cold vanilla ice cream makes one of our favorite treats.
Preheat the oven to 375° F and grease an 8x8 inch baking dish with non-stick spray.
In a large mixing bowl, combine the sliced peaches, sugar, cornstarch, and cinnamon. Lightly stir to coat the peaches evenly.
6 cups fresh peaches, ¼ cup white sugar, 2 tablespoons cornstarch, ½ teaspoon ground cinnamon
In a separate bowl, add the mix flour, sugar, and baking powder and mix together.

Add the diced cold butter to the flour mixture and use a pastry cutter or your fingers) to blend the butter into the flour . ( until the butter is about pea size).
4 tablespoons cold butter
In a small bowl, add the milk and vanilla extract and mix together.
¼ cup milk, 1 teaspoon vanilla extract
Pour the milk into the dry ingredients and stir until a crumbly dough is formed.
Using a slotted spoon to remove the peaches from their juices, transfer the peach to the prepared baking dish and spread evenly. Discard the peach juices.
Sprinkle the cobbler topping all of over the top of the peaches evenly
Then top with coarse sugar or turbinado sugar all over the cobbler topping.
¼ cup coarse sugar
Bake for 40 to 45 minutes, or until the peach filling is bubbling and the topping is golden brown.
Remove the peach cobbler from the oven and let it cool for a few minutes before serving.
Enjoy warm with a scoop of vanilla ice cream or a dollop of fresh whipped cream.
Notes
Use thawed frozen or canned peaches that have been drained and patted dry with paper towels.Cornstarch helps thicken the peach layer so the cobbler isn’t too wet.Use gluten free flour if needed.
